This recipe works as well for mini, regular and gigantic size muffins.

Kim’s Multi-Grain Breakfast Mix
2 Eggs
2 Tsp Vanilla
1 Cup Milk
1/2 Cup Canola
1 Cup Water*

* Add additional water to batter to desired consistency


Preheat oven to 350.
Blend all ingredients together in bowl. Mix thoroughly.
Spray muffin pan with non-stick cooking spray.
Spoon batter into muffin tin to 1/2 full.
Add a slice or fruit, a couple of berries, raisins, cranberries, chocolate chips, a dollop of apple sauce (or anything else you like), fill the rest of the tin with batter.
(Top with nuts or granola for a crunchy top for variety.)
Bake 12-15 minutes, or until done.
